Back in October I baked one of Martha’s meringue concoctions called Baci di Dama, or Lady Kisses. They were meringue, cocoa and crushed almond confections with chocolate ganache sandwiched between them. They were quite tasty, but if you look back at the photo, they resembled deer poop more than lady kisses.

Martha’s Peppermint Meringues with Chocolate filling is a minty, Christmasy version of the Baci di Dama and my partner, Dan being disappointed in the name for these began calling them elf poop cookies. So, ladies and gentlemen, here you have them… Martha’s Elf Poop treats.

This particular cookie intrigued me from the moment I bought the book. How do you get those red stripes so perfectly on a meringue? Do you paint each one?

Here’s how they were made:

A simple meringue of sugar, egg whites and cream of tartar was whipped up. I actually added a bit of meringue powder to make sure the meringue was quite stiff. Peppermint extract is added to the meringue to give it the right Christmas attitude. To achieve the proper red stripes I had to prepare a pastry bag fitted with a 1/4 inch star tip. With a Q-Tip I painted three long red streaks of gel food coloring from the star tip to midway up the pastry bag. I then filled the bag with the meringue and piped out 1/2 inch striped starlets. These were baked at low heat for over an hour. The trick with meringue cookies is to dehydrate them and not allow them to brown.

Melted semi-sweet chocolate combined with a little heavy cream made the ganache filling.

These were surprisingly delicious. I baked them for a party some friends were throwing and everyone described them as the reverse of a peppermint patty. Instead of peppermint wrapped in chocolate, these were chocolate wrapped in peppermint.

They also loved the name…

Nothing says Christmas like fresh made elf poop.
